Cheese from Cornwall

Both goats and cows cheese are made here in Cornwall. Perhaps the best known
is Cornish Yarg. The tale is that the name comes from "gray" spent
backwards. Why gray you may ask - answer because the cheese is matured wrapped
in nettle leaves, which turn gray as the cheese ages. I am never sure whether
to believe this or not

Cheese Makers
- John and Caryl Minson, Menallack Farm, Treverva, Penryn, Cornwall TR10
9BP. They make a range of cornish cheeses near Falmouth. They produce 10 cheeses
on the farm from cow, goat, sheep and buffalo milk and stock and supply all
the other dozen or so other locally produced Cornish cheeses. Their e-mail

- Margaret and Michael Horrell on 01579 362244 at Netherton
Farm , near Upton Cross, Liskeard, are the owners of the Yarg
recipe - they tell me that in fact the gray isn't after the colour, it's
a name. Allan and Jenny Gray first worked on the recipe about 20 years
ago, before coming to make it on a commercialscale. They sold the Horrells
the recipe -- and the name of course -- and departed shortly after. This cheese
takes ten to fifteen weeksto mature and during this period the interior softens
and the taste changes, reminding meadow flowers and creamed spinach. Other
cheeses produced by Michael Horrel, include Cornish Pepper and Cornish Herb.

- Cornish Cheese Company at Knowle Farm near Liskeard. Here at Knowle Farm,
cheesemakers Ray Pope and Phillip Stansfield produce the finest cheeses from
